Applications:
1. Application of Bromelain in Food Processing Industry
1) Baked food: Adding bromelain to the dough can degrade gluten, and the dough is softened and easy to process. And can improve the taste and quality of biscuits and bread.
2) Cheese: used for coagulation of casein.
3) Meat tenderization: bromelain hydrolyzes the large molecular protein of meat protein into easily absorbed small molecular amino acids and proteins. It can be widely used in the fine processing of meat products.
4) The application of bromelain in other food processing industries. Some people have used bromelain to increase the PDI value and NSI value of soybean cake and soybean powder, so as to produce soluble protein products and breakfast, cereal food and beverages containing soybean powder. Others include the production of dehydrated beans, baby food, and margarine; clarification of apple juice; manufacture of soft candy; digestible food for the sick; and flavoring of everyday foods.
2. Application of Bromelain in Medicine and Health Products Industry
1) Inhibit the growth of tumor cells
Observations from relevant clinical studies have shown that bromelain can inhibit the growth of tumor cells.
2) Prevention and treatment of cardiovascular diseases
As a proteolytic enzyme, bromelain is beneficial to the prevention and treatment of cardiovascular diseases. It inhibits heart attacks and strokes caused by platelet aggregation, relieves angina symptoms, moderates arterial constriction, and accelerates the breakdown of fibrinogen.
3) Used for descaling of burns
Bromelain can selectively remove the skin, so that the new skin graft can be carried out as soon as possible. Animal experiments have shown that bromelain has no adverse effects on adjacent normal skin. Topical antibiotics do not affect the effect of bromelain.
4) Anti-inflammatory effect
Bromelain is effective in treating inflammation and edema in various tissues (including thrombophlebitis, skeletal muscle injury, hematoma, stomatitis, diabetic ulcers and sports injuries), and bromelain has the potential to activate inflammatory responses. Bromelain also treats diarrhea.
5) Improve drug absorption
Combining bromelain with various antibiotics (such as tetracycline, amoxicillin, etc.) can improve its efficacy. Relevant studies have shown that it can promote the delivery of antibiotics at the site of infection, thereby reducing the amount of antibiotics used. A similar effect is presumed for anticancer drugs. In addition, bromelain can promote the absorption of nutrients.
3. Application of Bromelain in Beauty and Cosmetics Industry
Bromelain has excellent effects of skin rejuvenation, whitening and speckle removal.

4. Application of Bromelain Preparation in Feed
